After harvesting, the largest pieces go to the family‑run business in La Rioja province, south of Bilbao, Spain. Here the sardines are processed using traditional artisanal techniques and placed in a handy jar already cooked, without head, tail or guts. After the sardines are sliced, only high‑quality Spanish organic olive oil is added to fine‑tune the flavour profile and the extra nutritious, top‑tasting sardines are ready.

Excellent, I only make a spread from sardines and these are a bit harder to mix with a fork, the creamy consistency is harder to achieve than the smaller ones in the can, but they taste great.
