Zucchini Gnocchi with Bryndza

Zucchini season is finally here, but finding inspiration for all that quantity of produce can be a challenge.These zucchini gnocchi are just what you need! A simple recipe that will revive the golden Slovak classic and perfectly nourish the body! 💪🏻

Per 4 portions

  • 300 g bread flour
  • 2 zucchinis
  • 2 eggs
  • 1 tsp salt
  • 150 ml milk
  • 250 g bryndza
  • 40 g bacon

Instructions

  1. Zucchini Gnocchi with BryndzaIn a bowl, mix the flour, egg and salt. Add the grated zucchini and gradually add the milk until you get a thick batter.

  2. In a pot, bring enough salted water to a boil. Using a special gnocchi grater or a small perforated ladle, form small pieces of dough and place them in the boiling water. Cook for 3‑5 minutes until the gnocchi float to the surface.

  3. Add the strained gnocchi to the bowl with the bryndza and stir to coat well. Add a little fried bacon and serve.
