Vilgain Cacao is a cocoa powder made from unroasted cocoa beans of the Criollo variety from controlled organic farming in Peru.
A noble and valued variety
The Criollo cocoa plant is very sensitive to growing conditions and therefore accounts for only one percent of the global harvest. However, in terms of flavour, they are the most delicate and aromatic of all the varieties. They have a velvety smooth taste with varied fruity and spicy flavour notes without acidity or astringency.
Unroasted and unalkalized beans
Cocoa beans are processed by fermentation and then ground and heated to produce the resulting fine cocoa powder. It is this processing process that preserves a wide range of minerals and vitamins in the product. In addition, the cocoa is not alkalinised so that the antioxidants and polyphenols are preserved.
